4 tablespoons (½ stick) butter
½ teaspoon salt
¾ cup sugar
3 egg yolks
Juice of 1 lemon (about 3 tablespoons)
2 teaspoons grated lemon rind
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
2 cups mashed sweet potatoes
1 cup whole milk, scalded
3 egg whites, stiffly beaten
1 (9-inch) pie shell, unbaked
Heat the oven to 425°.
Blend butter, salt, and sugar. Add the egg yolks, lemon juice and rind, cinnamon, nutmeg, allspice, sweet potatoes, and hot milk. Fold in egg whites. Pour the mixture into the pie shell and bake for 10 minutes. Reduce heat to 350° and continue baking for 30 to 40 minutes until firm in the center.
This pie is also excellent topped with a meringue. For a special touch, add a tablespoon of Maker's Mark bourbon before baking.
Yield: 8 servings.
