1 8oz package feta cheese, crumbled
4 oz cream cheese, softened
1 small garlic clove, minced
2 Tbls extra virgin olive oil
½ cup chopped ripe olives
2 Tbls sliced green onions
½ cup chopped walnuts
⅓ cup chopped parsley
Mix feta cheese, cream cheese, garlic, and oil with electric mixer on medium speed until blended. Add olives and onions and mix well. Shape feta cheese mixture into a 10" log, wrap in plastic and chill in refrigerator while toasting walnuts. Toast walnuts in a large non-stick skillet on medium-high heat 5 minutes stirring constantly; cool. Remove feta log from refrigerator, roll in parsley and walnuts. Wrap in plastic, refrigerate.
To serve, remove plastic wrap and serve with assorted crackers.

Cooking time: 5 minutes
For the holidays, consider adding ¼ cup well drained diced sun-dried tomatoes to the cheese mixture.
