Scalloped ham and potatoes is a dish I've enjoyed for as long as I can remember. It's still a great one-dish meal on busy days and a great comfort food in cold weather. Of all the recipes for this old favorite, Lorene Fulkerson's is the best.
4 tablespoons (½ stick) margarine
¼ cup flour
2 cups skim milk
1 teaspoon salt
½ teaspoon pepper
6 medium potatoes, peeled and thinly sliced
2 small onions, chopped
2 cups chopped cooked ham
½ pound Velveeta cheese, grated (2 cups)
Preheat oven to 350°. Make the white sauce by melting the margarine ina a saucepan over low heat and adding the flour, stirring well until smooth. Cook one minute, stirring constantly, until the mixture is thick and bubbly. Add salt and pepper.
Pour ¼ cup of the white sauce into a 12x8x2-inch or 13x9x2-inch greased baking dish. Layer the potatoes, onions, ham, remaining white sauce, and cheese. Cover and bake for one hour. Uncover and bake 5 minutes more.
Yield: 8 servings.
