Racehorse Tarts

CRUST
1½ cups flour
Dash of salt
1 teaspoon sugar
½ cup solid vegetable shortening
⅓ cup ice water
1 egg yolk

FILLING
½ cup flour
1 cup sugar
2 eggs, beaten
1 stick butter, melted
½ cup pecans
1 cup chocolate chips
1 teaspoon vanilla extract
Good Kentucky Bourbon

Preheat oven to 350 degrees.

TO MAKE THE CRUST
Mix flour, salt and sugar. Cut in the shortening with a pastry cutter until it reaches the crumb stage. Beat the egg yolk with ice water and add it to the mixture one tablespoon at a time. Press the crust into miniature muffin pans.

TO MAKE THE FILLING
Mix the flour and sugar and add the eggs and melted butter. Add pecans, chocolate chips and vanilla extract. Pour into shells and bake for 20 minutes. Brush the tarts with bourbon while still hot.

Yield: 3 dozen miniature tarts
