4 cups dry bread cubes or crumbs
1 pound bulk sausage, browned and drained
½ cup green pepper, minced
1 cup green onions, sliced
8 eggs, beaten
4 cups milk
1 pound sharp cheddar cheese, grated
2 teaspoons ground mustard
½ teaspoon Worcestershire sauce
¼ teaspoon Paprika
8 bacon slices fried crisp, drained and crumbled
Spray 9×13" baking dish. Sprinkle bread cubes evenly over bottom. Sprinkle cooked sausage over crumbs. Place pepper and onions over sausage. Mix eggs, milk, cheese, mustard, Worcestershire sauce and paprika and pour over sausage. Sprinkle bacon over top. Cover and refrigerate overnight. Bake uncovered at 350° for 50 to 60 minutes.
Serves 12 to 15.
Uncommonly good Strata from my good friend Joyce, whom I met in Seaside, Oregon at James Beard's cooking class. She and her husband, Mick, have retired and now run a Bed and Breakfast Inn in Cedaredge, Colorado. It is worth the trip just to sample her "goodies".
