1 pt. cherry tomatoes
3 oz. pkg. cream cheese, softened
2 Tbsp. lemon juice
¼ cup freshly grated Parmesan cheese
¼ cup pine nuts, finely chopped
½ cup parsley, finely chopped
½ cup basil, finely chopped
2 cloves garlic, finely chopped
Cut tops off cherry tomatoes; scoop out pulp. Combine cream cheese with lemon juice in medium-size bowl until smooth. Stir in Parmesan, nuts, parsley, basil, and garlic. Fill cherry tomatoes with mixture and chill. Makes approximately 12.
