6 catfish filets (6 to 8 ounces)
Vegetable cooking spray
⅓ cup lemon juice
3 Tablespoons melted butter
1 Tablespoon lemon pepper seasoning mix
Place the fish in a grilling basket coated with cooking spray. Combine the lemon juice, butter, and lemon pepper seasoning and brush the filets with the mixture. Place the basket on your grill and close the cover of grill. Grill over medium coals (300° to 400°) 6 to 8 minutes on each side or until fish flakes with a fork. Baste often while fish is cooking.
Serve with roasted vegetables.
